bannock tacos

ELK CHILI

Ingredients

  • 1 lb Ground Elk (You may also use ground moose, deer or beef)
  • 1 onion diced
  • ½ cup Green bell pepper, diced
  • 3 cloves of garlic, diced
  • 2 tbsp Chili Powder
  • Salt & Pepper to Taste
  • 1 can of Diced tomato
  • 1 can of Tomato Sauce 
  • 1-2 Tbsp Tomato paste
  • 1 can of Red kidney Beans 
  • A dash of hot sauce to taste
  • A dash of Worcestershire Sauce

Directions

In a large sauce pan over medium high heat, combine the ground beef, onion, and bell peppers. Sauté’ until the meat is browned, drain excess fat. Return to heat, and add the chili powder, salt & pepper, hot sauce, Worcestershire sauce, and let cook for 2 minutes. Add all the diced tomato, tomato sauce, & Red Kidney Beans. Simmer the chili on low. If you like spicy chili add more chili powder and hot sauce. 


BANNOCK

Ingredients

  • 6 cups of All Purpose Flour
  • ½ cup of Powdered Milk
  • ¼ Cup of Sugar (Optional)
  • 1 Tbsp Sea Salt or 2 tsp Table Salt
  • 2 Tbsp Baking Powder
  • 3 Cups of Warm Water
  • 2 cups of Canola oil for frying

Directions 

Before you start mixing the bannock, start to slowly preheat the canola oil in a heavy bottomed pan on medium low (at about 4 on the dial). Mix all the dry ingredients together in a bowl, make a well in the middle and add the warm water. Mix the bannock until there is no dry spots, you may need to add more water. *If you have time, let the bannock rest covered with plastic for 20 minutes for best results, but remember to time heating your oil accordingly. Once the oil is ready to start frying, dust about a ½ cup of flour to the top surface of the dough, and flour your hands and start making your bannock patties. Add each patty to the pan as you make them. Fry the bannock until golden brown on each side. 


To assemble your taco, put the bannock on the plate first, top with a serving of chili and top with your desired toppings.

Bannock Taco Topping Suggestions: Salsa or Pico De Gallo, Fresh diced Tomato, Cheddar Cheese, Sour Cream, Green Onion, Diced Peppers, Cilantro, or a Squeeze of Lime. Have fun and top your bannock taco with anything you would like!
